On 17 September 2021, ‘Dietary Fiber as a Multifunctional Food Component for Human Health’ was held at the CUHK and online via zoom with a total of 41 participants attended. In this talk, Prof Peter C.K. Cheung from the CUHK provided an overview based on current research on the chemical structure of dietary fiber and its relationship with the physiological functions that are beneficial to humans.
It is the eleventh talk of a series aiming to promote agrobiotechnology and enhance understanding of the potential applications of agricultural products. The target audience includes international scholars, researchers, agricultural industry as well as the general public.
